You are either rushing in the morning because you're late. Or all you want for breakfast is pancakes drenched in syrup. Or even better Cereal. Like Lucky Charms Cereal.  

If I am not on an intermittent fasting cycle (more on this in a different blog post) then I usually opt for a couple of my favorite options. I like simple & FAST! 

First option is: 

Scrambled Eggs with Sauteed baby spinach, and a side of oatmeal.

I like this option because it literally takes all of 5 minutes to whip this up. And for some of you that are rushing this is perfect!

For the scrambled eggs I always use: 1 whole egg, and 3 egg whites, with very little seasoned salt. If you are trying to avoid sodium you can add pepper to taste.

Now I always throw in the baby spinach first to let it wilt before I pour the egg mixture. This may sound weird but I use half a lime and squeeze all the juice onto the spinach. You see I’m Mexican, and in my house we literally put limes on everything. Like everything.

Let me tell you guys, this is a GAME CHANGER. If you’ve never done this, please try it! I swear this is the only reason I don’t get tired of having this almost every morning.

I am very basic when it comes to oatmeal. I add one teaspoon of peanut butter for my healthy fats, cinnamon, and my favorite blueberries. I usually scarf down the eggs in like 2 minutes and eat this last.

*note: If i don’t use PB in my oatmeal, I add 2 slices of turkey bacon as my healthy fats. Bacon takes longer so i usually scoop PB instead.

Second option is:

Avocado Toast with Sunny Side up eggs, with of course Baby Spinach. I really like baby spinach.

My favorite brand of bread is DAVE’S KILLER BREAD which is only 60 calories a slice.

I only use 1/4 of an avocado as I like to spread out my fats throughout the day. I add seasoned salt, lime (of course), and pepper. I prepare spinach the same way I did above and add to the toast. I top it off with sunny side up eggs.

Since its not enough protein, I usually make a protein shake and drink it while I am eating breakfast.

This also  takes about 5 minutes to make or probably even less depending how fast you are.

Third option is: 

Protein smoothie with yummy stuff inside 🙂

I use chocolate protein powder, peanut putter, blueberries/strawberries, oatmeal, and of course baby spinach. I literally throw everything in my ninja and its done in under a minute!!

The whole process can be done in like 3 minutes if you get everything out quickly.

 

I am very simple when it comes to breakfast and I usually use all my creative juices for lunch & dinner. I can eat the same thing the whole week for breakfast and be perfectly fine.
